Chicken Zucchini Soup Noodle

Origin : Australia


  • 200g chicken thigh fillets (thinly sliced)  
  • 700g zucchini  
  • 1/2 tomato – fruit allocation 

Spices Used

  • 1 clove garlic 
  • 1/2 teaspoon turmeric and cumin powder  
  • Himalayan Pink Salt as per your taste

Cooking Method

Step 1

Prepare your zucchini using a spiralizer and set aside.

Step 2

In a frypan dry fry thinly sliced chicken for approximately 2 mins and then add minced garlic, pinch of salt, turmeric, cumin powder and tomato. Keep stirring for 5 to 8 minutes. Then add water to finish off and bring to simmer on low heat.

Step 3

Heat non sticky pan in high heat then add 700g zucchini and add 4-5 drops of tamari sauce. Cook it for 2-3 mins in high heat

Step 4

Add zucchini noodles with the chicken soup and cook it in high heat for a minute. Garnish with coriander leaves and seasoned with a little more salt if you like.
