Chicken Zucchini Soup Noodle

- 200g chicken thigh fillets (thinly sliced)
- 700g zucchini
- 1/2 tomato – fruit allocation
- 1 clove garlic
- 1/2 teaspoon turmeric and cumin powder
- Himalayan Pink Salt as per your taste
Prepare your zucchini using a spiralizer and set aside.
In a frypan dry fry thinly sliced chicken for approximately 2 mins and then add minced garlic, pinch of salt, turmeric, cumin powder and tomato. Keep stirring for 5 to 8 minutes. Then add water to finish off and bring to simmer on low heat.
Heat non sticky pan in high heat then add 700g zucchini and add 4-5 drops of tamari sauce. Cook it for 2-3 mins in high heat
Add zucchini noodles with the chicken soup and cook it in high heat for a minute. Garnish with coriander leaves and seasoned with a little more salt if you like.
